Aunt Betty’s Irish Soda Bread

Ingredients
  • 4 cups Flour
  • 1/2 cup Sugar
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 2 tsp Baking Powder
  • 1 1/2 tsp Caraway Seeds (but can use less, such as 1/2 tsp for less intense flavor)
  • 1 cup Raisins (or use 1/2 cup Raisins and 1/2 cup dried cranberries)
  • 1 Egg
  • 2 tbs vegetable oil
  • 1 1/2 cup Buttermilk

Instructions
  1. Preheat oven to 375 F.
  2. Mixing bowl 1 - dry ingredients: mix four, sugar, baking soda, salt, baking powder, caraway seeds, and raisins

  3. Mixing bowl 2 - wet ingredients: mix egg, vegetable oil, buttermilk.
  4. Working quickly, mix dray ingredients into the wet ingredients. If too wet to handle, add a little more flour. work into 2 bread balls.
  5. Place on parchment paper on a cookie sheet, or use an oiled cast iron frying pan.
  6. Cut an X about 1/2 inch deep into the top of each.
  7. Place in preheated oven for 20 minutes at 375.

  8. Lower heat to 350 F and continue baking 20 to 25 minutes.
